Pumpkin Bread with Apple Cider Glaze
As the colorful leaves change to snowfalls and you pull out your favorite sweaters, you will definitely want to try this Pumpkin Bread with Apple Cider Glaze. It has all the best Fall flavors wrapped up in one delicious loaf of bread. So put on your holiday playlist, break out the apple cider, and start baking!
This recipe was inspired by my recent trip to Door County, Wisconsin. For those of you not from the Midwest, Door County is a little piece of Heaven in North East Wisconsin. It is a peninsula dotted with tiny towns full of state parks, restaurants, wineries, shopping and more. The area was recently voted the best place to see Fall foliage by USA Today. My parents bought a cottage in Fish Creek before I was born and I have been there every year since. It is my absolute favorite place in the whole world! I’m working on a post about Door County in the Fall, but for now, let’s get back to the pumpkin bread with apple cider glaze! This bread was made with cider from Seaquist Orchards in Door County 🙂
Pumpkin Bread with Apple Cider Glaze
Ingredients
- 1 1/4 cup pumpkin puree
- 1 cup brown sugar
- 1 1/2 cup ap flour
- 2 eggs
- 1/2 cup butter softened
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp cloves
- 1 tsp vanilla
- 1 tsp salt
- 1/3 cup apple cider 3 tbsp for the bread, 3 tbsp for the glaze
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup powdered sugar
Instructions
- Set oven to 350 F and grease a 9" loaf pan.
- Combine all the ingredients, using only 3 tbsp of the apple cider, in a bowl. ***you can substitute 1 1/2 tbsp of Pumpkin Pie Spice for the cinnamon, nutmeg, clove, and ginger.*
- Beat the ingredients until they are well blended.
- Pour the batter in the loaf pan and place in the oven for 45 minutes or until a skewer comes out clean. Allow to cool.
- In a bowl, combine 3 tbsp of apple cider vinegar and 1/2 cup of powdered sugar until it reaches the consistency of a glaze. It should be thin enough to drizzle over the bread, but not runny.
- When the loaf if cool, drizzle the glaze over the top, slice, and enjoy!
You could absolutely make this pumpkin bread without the glaze if that’s your thing. I have tried it that way and it was fantastic. It makes an especially good breakfast on the go! Great for a light Thanksgiving morning. The glaze steps it up a notch and adds a bit of sweetness. So make the decision based on your preference! Since we’re talking modifications, I will also add that this tastes excellent with a hot apple cider or cinnamon tea. Eating your pumpkin bread with apple cider glaze in the evening? Try it with a pumpkin beer!! Because you can never have too much pumpkin around this time of the year. My favorite is Schlafly. Enjoy, friends!
