Pumpkin Bread with Apple Cider Glaze

Ingredients
  

  • 1 1/4 cup pumpkin puree
  • 1 cup brown sugar
  • 1 1/2 cup ap flour
  • 2 eggs
  • 1/2 cup butter softened
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp cloves
  • 1 tsp vanilla
  • 1 tsp salt
  • 1/3 cup apple cider 3 tbsp for the bread, 3 tbsp for the glaze
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup powdered sugar

Instructions
 

  • Set oven to 350 F and grease a 9" loaf pan.
  • Combine all the ingredients, using only 3 tbsp of the apple cider, in a bowl. ***you can substitute 1 1/2 tbsp of Pumpkin Pie Spice for the cinnamon, nutmeg, clove, and ginger.*
  • Beat the ingredients until they are well blended.
  • Pour the batter in the loaf pan and place in the oven for 45 minutes or until a skewer comes out clean. Allow to cool.
  • In a bowl, combine 3 tbsp of apple cider vinegar and 1/2 cup of powdered sugar until it reaches the consistency of a glaze. It should be thin enough to drizzle over the bread, but not runny.
  • When the loaf if cool, drizzle the glaze over the top, slice, and enjoy!
