Set oven to 350 F and grease a 9" loaf pan.
Combine all the ingredients, using only 3 tbsp of the apple cider, in a bowl. ***you can substitute 1 1/2 tbsp of Pumpkin Pie Spice for the cinnamon, nutmeg, clove, and ginger.*
Beat the ingredients until they are well blended.
Pour the batter in the loaf pan and place in the oven for 45 minutes or until a skewer comes out clean. Allow to cool.
In a bowl, combine 3 tbsp of apple cider vinegar and 1/2 cup of powdered sugar until it reaches the consistency of a glaze. It should be thin enough to drizzle over the bread, but not runny.
When the loaf if cool, drizzle the glaze over the top, slice, and enjoy!
