Simple Lavender Lemon Cake

Like most people on Earth, I have been making quite a bit of banana bread during quarantine, but today I decided to mix it up with a simple Lavender Lemon Cake! This happened for a couple reasons, the main one being that we didn’t have any bananas. I also happened to have a surplus of lemons because margaritas. To top it off, some time last year I bought a giant bag of culinary lavender on the internet and haven’t even made a dent in it. And so this cake was born!

There are quite a few recipes for a Lavender Lemon Cake floating around Pinterest, but I wanted a super simple recipe with limited ingredients and no icing. I ended up combining a few different recipes to make this one! The cake is mildly sweet and quite floral. If you also need a break from banana bread, be sure to try out the recipe below!

Simple Lavender Lemon Cake

Prep Time 15 minutes
Cook Time 1 hour
Course Dessert
Servings 8 people

Ingredients
  

  • 3/4 cup sugar
  • 1 stick butter
  • 2 large eggs
  • 1/2 cup greek yogurt
  • 3/4 cup fresh lemon juice
  • 2 tbsp lemon zest
  • 2 cups flour
  • 1 tsp dried culinary lavender
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 325 and grease a 9 inch loaf pan.
  • In a large bowl cream the sugar and butter.
  • Mix in the eggs, greek yogurt, lemon juice, and lemon zest one at a time.
  • In a separate bowl mix together the flour, lavender, baking powder, and salt.
  • While mixing, slowly add the dry ingredients to the wet ingredients.
  • Pour batter into a 9 inch loaf pan and bake for 55 minutes. Enjoy!

If anything good has come of this quarantine, it’s that my cooking and baking skills have gone way up! As have my grocery bills. Good thing there isn’t anything else to spend money on!
