Nectarine Pistachio Upside-Down Cake

This cake! It is SO good. Thanks to an impromptu trip to the farmers market, I came home with way more produce than one person could possibly eat. Enter: nectarine pistachio upside-down cake. Now that I’ve written upside-down twice, and now 3 times, it reminded me of Stranger Things. Upside-down cake is the perfect dessert for hosting a viewing party! *Makes mental note to create a whole post for a Stranger Things viewing party!

We grew up eating pineapple upside-down cake as kids, but this variation is new to me. What I’ve learned is that you pretty much can’t go wrong when you mix brown sugar, butter, fruit, and cake. I’m already thinking about a cinnamon apple version for the Fall! But for now, nectarines are super in season and pair perfectly with pistachio. Baking with nectarines reminds me of my dad. He was always bringing them home in the summer and enjoying them after a run. So here’s a cake for you, Papa!

Nectarine Pistachio Upside-Down Cake

Ingredients
  

  • 1 cup pistachios ground
  • 2 cup all-purpose flour
  • 1 tsp baking soda
  • 1 cup sugar
  • 1 tsp salt
  • 1/2 cup milk
  • 1/2 cup greek yogurt
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1/2 cup butter (1 stick)
  • 4 nectarines thinly sliced
  • 2 tsp vanilla extract
  • 1 tsp almond extract

Instructions
 

  • Preheat oven to 350 degrees F
  • Use a food processor to finely chop the pistachios
  • Combine flour, baking soda, sugar, and salt
  • In a separate bowl, whisk together yogurt, milk, eggs, and 4 tablespoons of melted butter
  • Pour the wet ingredients into the dry ingredients and mix together until just combined
  • Melt the remaining butter in a large cast iron skillet and mix in the brown sugar
  • Slice nectarines into thin wedges and arrange the wedges in a single layer on top of the butter and brown sugar mixture
  • Pour batter evenly over the top of the nectarines and bake for 45-50 minutes or until a skewer comes out clean

This recipe should obviously be served with vanilla ice cream, or at least whipped cream. It’s a great dessert to bring to a summer party because it doesn’t have to be refrigerated.
