What We’re Cooking During Social Distancing
Hello, friends! I hope you are all staying safe and healthy this week. Colin and I are very fortunate to be working from home and we are so grateful to all those who are working to make sure our country has basic necessities, as well as every healthcare worker fighting this virus. Thank you, thank you, thank you. How are you all spending your time at home? Have you been cooking during social distancing? We are only on day 5 and I can’t even count how many snacks we’ve plowed through. Boredom and anxiety are a recipe for accidentally eating a whole box of Cheez-Its in one sitting. So to curb our bad eating habits, I am sharing what we’re cooking during social distancing. And bonus!- A couple hours in the kitchen is a great way to pass time spent indoors.
Tomato, Artichoke, and Olive Pasta
Vegetable Jambalaya
Creamy Golden Rice with Spiced Chickpeas
Homemade Chicken Noodle Soup
Charlie Bird’s Farro Salad
Banana Bread
This list will get you 5 homemade meals with plenty of leftovers (depending on how many people you cook for!). And banana bread for dessert. Or breakfast. Or a snack. Comfort food is important right now! I’m also a huge fan of pumpkin bread. That recipe is here. Let me know what you’re cooking during social distancing! We love to try new food! Depending on how long we have to stay isolated, I will continue to post recipe ideas for the week. I’ve even dabbled with the idea of posting cooking videos, but I’m really not that entertaining…so. We’ll see how stir crazy I get 😉 I cook and eat mostly vegetarian, but feel free to send any of your favorite recipes this way! Stay home, stay healthy, stay positive!
