Christmas Butterballs!
Also known to some as snowballs, Mexican wedding cookies, Italian wedding cookies, etc., these Christmas Butterballs are THE BEST cookies ever. At least in my opinion. But I’ve never met someone who didn’t at least enjoy them 🙂 Keep reading for our family recipe!
These cookies feel extra special to me because they are only made at Christmas. My mom makes about 6 double batches because there is a list of people who adore them and would disown her if she didn’t make cookies. I’m only sorta kidding. Most recipes for this type of cookie are similar, but here is my Mimi’s recipe:
Christmas Butterballs Recipe
*Note: makes about 40 cookies
Christmas Butterballs
Ingredients
- 1/2 lb butter
- 5 tbsp sugar
- 2 tsp vanilla
- 2 cup flour
- 1 cup pecans, chopped
- powdered sugar
Instructions
- Preheat oven to 300 degrees.
- Cream the butter and sugar together until fluffy, then add vanilla.
- Mix in the flour 1 cup at a time.
- Mix in the chopped pecans.
- Scoop out 1 inch balls of dough and place on a cookie sheet. You don't have to leave much room as the cookies don't spread.
- Bake until golden. This will take about 50 minutes – don't be alarmed!
- Allow cookies to cool slightly and then sprinkle with powdered sugar.
- Start making another batch because you're going to eat all these cookies yourself!
